I was reading my Oakland Athletics Press guide & it has Stadium info on ALL the teams & according to the book, Fenway Park holds more people for Night games then day games. Why is this?

They have a club only open at night to add stadium pop.

I went on a tour of Fenway Park today, and I learned the REAL answer to your question. But first, you need to understand the history of the park:

Fenway Park was built in 1912. When the original park was built, nightlights were not a regular part of baseball. Because of this, Fenway was built so that the sun's rays would shine upon the field during the game. However, if a ball was hit to straightaway center field, the sun would cause a problem if a fan in center wore a white shirt blending with the baseball. So there is a black covering over about 150 seats in center during day games. during night games, when they have artifical light, they do not need the black covering, so they are able to sell more tickets for night games than day games.

(Does anybody know what this is called?)

(Note: tour Fenway Park, and they might tell you a funny story about a day game and these seats.)

Does anybody know what this is called?

The blacked out area over the center field wall directly aligned with the pitcher's mound and home plate is referred to as the "Batter's Eye".

In some ballparks, it's not necessarily a part of the stand that's missing seats...I've seen some eyes that resembled a plain black scoreboard-like structure that is simply black and blank.

I have been on a Fenway tour as well :) I learned a lot of things i never knew before

Most ballparks have their own version of Batter's Eye. In Yankee Stadium, there is a group of black seats that are never sold (Even for night games...strange that it has its own entrance thingy). At Ameriquest Field* there is a patch of grass that the fans always run onto when a home run is hit (which, considering that the Rangers lead the ML in HRs, is common.)

*Ameriquest Field is in Arlington, TX, which is next to Fort Worth (and we know what is in that area!)
